蛋白質來源分為兩大類：動物蛋白質和植物蛋白質
1）動物蛋白質
動物蛋白質通常來自於牛奶類，最常見的是protein isolate （蛋白質分離）和protein concentrate （濃縮蛋白）。前者蛋白質的更純，含有極少的膽固醇，脂肪和乳糖。後者的價格更低，但是蛋白質的純度也會更低。
在選擇蛋白粉的時候，有些人會為了更高的蛋白粉純度選擇protein isolate （蛋白質分離）。不過蛋白棒通常會加碳水化合物，油脂以及以上兩種蛋白質，所以我個人認為在選擇蛋白棒時沒有非要區分這兩者的必要。
幹蛋白和希臘酸奶也會提供部分蛋白質，不過只有少量的蛋白棒會採用這兩種材料。
2）植物蛋白質
植物蛋白質最常見的是黃豆蛋白質。不過由於有些人食物過敏的原因很多蛋白棒會採用一些來自於發芽後的植物蛋白，例如發芽了的糙米，小米，南瓜籽等。
豌豆蛋白質也因為過敏機率比較低，對於部分人來說更好消化（不會脹氣）以及味道的原因在近期越來越收到歡迎。不過這些因素還是因人而異，從營養程度並沒有過多的優勢。
除了這些之外，堅果，藜麥以及麵粉也會提供部分蛋白質，但主要蛋白棒中的蛋白質來源還是靠以上所說的成分。
